Passover, the Jewish holiday commemorating the Jews’ exodus from Egypt, begins tonight. For eight days, those celebrating will exchange bread for matzo, pasta for potatoes, and pretzels for bissli. The prohibition against leavened goods from wheat, barley, oats, spelt, and rye poses a confounding challenge to those relying primarily on the dining hall favorites of pizza, pasta, and peanut butter and jelly sandwiches. The following preparations can be reproduced within even the smallest of dorm room singles. Or, if the prospect of grocery shopping and/or cleaning lacks its characteristic allure, there’s always take out.
1. Matzo Pizza
The ubiquitous and unfailing Passover delight. Layer a spoonful of tomato sauce on one sheet of matzo and sprinkle with shredded mozzarella cheese. Place in the microwave until the cheese begins to melt. If you squint a bit, it almost resembles the real thing.
