Yes, halal is ambiguous. There are times when you’re about to dig in to a delicious smelling chicken or lamb platter and you can’t help but wonder: Do they clean the stove top? Why is the rice so fluorescent? And—perhaps most importantly—what are the ingredients to white sauce? I prefer not to dwell, and instead enjoy it for what it is: great, simple street food.
