RECIPE: Making pumpkin cake in Wallach

It's fall! That means pumpkin is in season. Harry Flager had the good sense to put it into a cake and frost it...

Pumpkin Cake

Yield: 20 2”x2” squares
Time Spent Working: 20 minutes
Baking Time: 45 minutes

Ingredients:

4 eggs
1 2/3 cup granulated sugar
1 cup vegetable oil
15 ounces pumpkin puree
2 cups all purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons cinnamon
1 teaspoon salt
8 ounces cream cheese (softened)
½ cup butter (softened)
2 cups powdered sugar
1 teaspoon vanilla

Directions:

1. Preheat your oven to 350 degrees Fahrenheit.
2. In a bowl, whisk together the eggs, granulated sugar, vegetable oil, and
pumpkin puree.
3. Add the flour, baking powder, baking soda, cinnamon, and salt.
4. Mix to combine.
5. Pour into a 9” x 13” pan and bake for 45 minutes.
6. While cake is cooling, beat together the cream cheese, butter, powdered
sugar, and vanilla.
7. Spread mixture evenly over cooled cake.
8. Share among friends.
9. Enjoy.
